Behold: Le Pepper Jack Chicken

Strawberry Mango Salad, Potatoes, BBQ Pepper Jack Chicken

Peel and slice potatoes, let sit in cold salted water (to prevent from spotting/browning)

Cut a chicken breast half in half, open

Place slices of Pepper Jack cheese

Fold

Spray foil with non-stick spray and place a layer of potatoes. Salt and pepper potatoes.

Coat chicken breast with BBQ sauce (both sides), place on top of potatoes

Layer sliced mushrooms on top

Layer slices of sweet onions on top (I also sprinkled some fresh grated Parmesan on top)

Wrap in foil (leaving an air space) and bake at 400 for 35 minutes (or 350 for 1 hour). Serve with additional BBQ sauce on the side. Enjoy!

Wish I had you to bake for me---since I have voice students or rehearsals every day until 6:30 or 7:00, so dinner is not very prepared.

Sometimes I'm intimidated to even read cooking posts, (it's not that I can't cook at all, but I tend to favor very simply prepared things,) but I'm hoping the cooking bug will rub off on me one of these times. This one does look pretty easy and yummy.

Ever thought about making 20x the amount and having people pick up their dinners to go? I'd pay BIG TIME for someone to prepare and all I'd have to do is bake! Hope it tasted as delicious as it looked...
