So let it begin

The yellow squash is from my aunt's garden, but it looks like a little UFO so I had to include it. Next year, I'm planting one of those. We only got one eggplant - any ideas on how I should use it? I'm an eggplant virgin.

Wow, I was in charge of egg plant in our garden and failed. Thise veggies look so good I couls eat them. Good work. Hey have you looked at jennifers blog she is auctioning off some paintings for chairity, you may like one so have a look. love ya. kel

I'm not an eggplant lover, so I have no great ideas. Oh wait--don't people make eggplant parmigian (totally spelled that wrong!)

I only got 2 eggplants, and I gave one away. I found these two recipes while looking last night online. I think I will try the first one tonight for dinner.

I don't think I have ever eaten eggplant, but it sure is pretty!
You are inspiring me to think about planting a garden of my own next year!

I've only ever made egg plant parmesan! It is pretty yummy! Alton Brown (food network) has a great recipe!
